Lors de la lacto-fermentation, il s&rsquo;agit de cr\u00e9er <strong>l&rsquo;environnement<\/strong> favorable au d\u00e9veloppement des bonnes bact\u00e9ries et \u00e0 la disparition des bact\u00e9ries pathog\u00e8nes : l&rsquo;ajout de <strong>sel<\/strong> et l&rsquo;<strong>absence d&rsquo;air<\/strong> sont 2 \u00e9l\u00e9ments primordiaux. Le sel fait sortir les hydrates de carbone des l\u00e9gumes. Les bact\u00e9ries lactiques se nourrissent des hydrates de carbone et se multiplient. En se multipliant, les bact\u00e9ries lactiques cr\u00e9ent un environnement acide. Avec un pH inf\u00e9rieur \u00e0 4.1 et sans oxyg\u00e8ne, les bact\u00e9ries pathog\u00e8nes meurent.<\/p>\n<\/div>\n<\/div><\/div>\n\n\n\n<p><strong>La lacto-fermentation est donc une technique de
